I certainly have a lot of love for pesto and it’s one of those wonder foods I’ll never get tired of.
It’s super quick to make, it freezes well and it can be used with everything from pasta (such as my Pesto pasta salad with green beans & spinach recipe) to salads (like in my Chunky mozzarella salad with basil, almond & roasted garlic pesto). Plus it makes the most amazing spread for sandwiches!
Although I still think that, overall, the classic pesto recipe (basil, pine nuts & cheese) will always be my favourite, the options certainly don’t end there.
Green, red, white and even purple pesto – I have put together some of the most interesting pesto recipes I’ve come across in the past week that have quickly made it to my “to try” list.
So ditch the ready-made jars and see how easy it is to make this delicious condiment at home!
A quick note for anyone making pesto for a vegetarian friend or relative.
Please bear in mind that not all cheeses are created equal. The classic Parmigiano Reggiano, Grana Padano and Pecorino from Italy are not suitable for vegetarians because they are made using animal rennet. But you can easily turn any recipe veggie-friendly by replacing these cheeses for the same quantity of vegetarian parmesan or hard cheese.
Alternatively, try one of the vegan recipes for a dairy-free option.

I think Blissful Basil’s recipe for Creamy sun dried tomato and avocado pesto is the one I am most keen to try as I’ve never had avocado in pesto before but I can see its creamy texture working really well.
